Speedy Moroccan Style Lamb

  • 1 cup (about 200 g) couscous
  • 1 tbsp (about 15 g) unsalted butter
  • 1 cup raw unsalted almonds
  • 8-10 lamb cutlets, or 600 g lamb backstrap
  • 1 tbsp MasterFoods™ Moroccan Spice Blend
  • 1 tbsp (15 ml) extra virgin olive oil, plus extra for drizzling
  • ½ cup pitted dates, diced
  • 60 g (about two good handfuls) baby spinach leaves
  • Juice of 1 lemon
  • Method:
    1. Begin by preheating your oven to 200 °C / 180 °C fan-forced and boiling a minimum of 250 ml water in the kettle.
    2. In a large mixing bowl, add couscous, butter, and stir in 1 cup boiling water. Cover with a tea towel and let sit for 5 mins.
    3. While the couscous is cooking, arrange the almonds in a single layer on a baking tray and roast for 10 mins, or until evenly coloured, then roughly chop and set aside to cool.
    4. In a medium mixing bowl, mix the lamb and Moroccan spice blend and set aside to briefly marinate.
    5. In a large non-stick pan, heat olive oil over medium heat and cook lamb for 3 mins per side, or an extra minute longer for more well done. Once cooked, rest the meat for at least 10 mins before slicing.
    6. While it’s resting, fluff up the cooked couscous with a fork and add the chopped almonds, dates, baby spinach, extra olive oil and lemon juice, mixing well. By now, your lamb is adequately rested and ready to be served up and enjoyed with the couscous alongside it.
