    1. Preheat the oven to 180 °C / 160 °C fan-forced. In a small mixing bowl, combine the herbs and spices. Place the lamb shoulder in a baking dish with a lid and coat generously with the spice mixture, ensuring to rub it into every surface. Don’t be afraid to use your hands here!
    2. Pour water (or stock if using) in the bottom of the baking dish then place a sheet of greaseproof paper over top and cover with the lid. Place the dish in the oven to cook for 2 ½ hours or until the texture is slightly soft and tender.
    3. To serve, place the baking dish in the centre of the table and serve alongside condiments, roast vegetables, or salad. Dress the lamb with the resting juices from the dish and enjoy!

    DID YOU KNOW?
Don’t rush the process! Cooking lamb at a low temperature over a long timeframe releases the tendons and muscles, making the meat soft and giving, perfect for cooking shoulders, shanks, and legs.
For a twist on the classic recipe, serve the lamb shoulder hot in crusty bread rolls with crunchy lettuce and MasterFoods™relishes or mustards.
