Beef Vindaloo

For the Marinade
  • 2 tsp MasterFoods™ Paprika Ground
  • 2 tsp MasterFoods™ Coriander Seeds Ground
  • 1 ½ tsp MasterFoods™ Chilli Ground
  • 1 tsp MasterFoods™ Turmeric Ground
  • 1 tsp MasterFoods™ Garam Masala Spice Blend
  • 1 tsp MasterFoods™ Cumin Seeds Ground
  • 1 kg gravy beef or similar, cubed
  • 5 garlic cloves, crushed or finely chopped
  • 2.5 cm-piece ginger, finely chopped
  • 2 tablespoons (30 ml) lemon juice
  • For the Sauce
  •  tbsp (45 ml) vegetable oil
  • 1 brown onion, roughly chopped
  • ¼ tsp salt
  • 2-3 long green chillies, deseeded and finely chopped
  • 2 tomatoes, diced
  • ¼ cup (60 ml) apple cider vinegar
  • 1 tsp sugar
  • 1 cup (250 ml) water
  • Methods:
    1. To make the marinade, mix the spices in a small bowl. In a larger mixing bowl, add beef, and sprinkle over the spices, garlic, ginger, and lemon juice. Stir until evenly mixed and refrigerate for at least 2 hrs.
    2. Using a large heavy-based pan, heat oil over medium heat. Add onion and brown it for 5 mins.
    3. Stir in salt and chillies, and cook for 30 secs then add the marinated beef. Continue to cook for about 5 mins, stirring continuously.
    4. Stir in the tomatoes, vinegar and sugar, and then scrape the bottom of the pan to release more flavour into the sauce! Add water and bring to a boil, then cover and turn the heat down to low and simmer for about 1 hr, stirring occasionally.
    5. With 10 minutes remaining, take the lid off to allow the sauce to thicken. Season to taste, serve, and enjoy with rice or naan!


    Salt prevents browning from occurring efficiently, so here, we’re adding it after the onion has caramelised! Every chilli has a different level of heat, so ensure to taste your sauce to ensure the right amount of spice for you!
