Chicken Korma

Ingredients:
  • 2 tsp MasterFoods™ Paprika Ground
  • 2 tsp MasterFoods™ Coriander Seeds Ground
  • 1 tsp MasterFoods™ Turmeric Ground
  • 1 tsp MasterFoods™ Garam Masala Spice Blend
  • 1 tsp MasterFoods™ Cumin Seeds Ground
  • 1 kg gravy beef or similar, cubed
  • 5 garlic cloves, crushed or finely chopped
  • 2.5 cm-piece ginger, finely chopped
  • 2 tablespoons (30 ml) lemon juice
  • Methods:
    1. To make the marinade, mix the spices in a small bowl. In a larger mixing bowl, add beef, and sprinkle over the mixed spices, garlic, ginger, and lemon juice. Stir until evenly mixed and refrigerate for at least 2 hrs
    2. Stir in salt and chillies, and cook for 30 sec. Then add the marinated beef. Continue to cook for about 5 mins, stirring continuously.
    3. Stir in the tomatoes, vinegar and sugar, and then scrape the bottom of the pan to release more flavour into the sauce! Add water and bring to a boil, then cover and turn the heat down to low and simmer for about 1 hr, stirring occasionally.
    4. With 10 minutes remaining, take the lid off to allow the sauce to thicken. Season to taste, serve, and enjoy with rice or naan!
