- Preheat the oven to 180 °C / 160 °C fan-forced. In a large mixing bowl, combine spices, oats, flour, brown sugar, and coconut. In another small bowl, mix bi-carb soda and boiling water together and set aside.
- Place a pan over low heat, and gently mix butter and golden syrup until melted. Add the bi-carb mixture and stir until the syrup becomes frothy, then remove from the heat and fold into the bowl of dry ingredients.
- Place baking paper on a baking tray. Use a teaspoon to scoop the biscuit mix and arrange on the tray, leaving a gap between each biscuit. Use the back of the spoon to flatten each one down and bake for 15 mins or until golden brown.
- Leave to cool slightly and enjoy while slightly soft, or if you can, wait until completely cooled to enjoy crunchy!
