Carrot Cake

Ingredients:
  • 55 g (½ cup) walnuts, chopped
  • 225 g (about 3) carrots, peeled and grated
  • 125 ml (½ cup) buttermilk
  • 190 g (1 ¼ cups) plain white flour
  • 1 tsp MasterFoods™ Cinnamon Ground
  • 1 tsp MasterFoods™ Ginger Ground
  • ¼ tsp MasterFoods™ Nutmeg Ground
  • ¼ tsp MasterFoods™ Cardamom Ground
  • 1 tsp baking powder
  • ¾ tsp salt
  • ½ tsp bi-carb soda
  • 2 large eggs
  • 115 g (½ cup) caster sugar
  • 70 g (⅓ cup) firmly packed brown sugar
  • 1 tsp vanilla extract
  • 90 ml (⅓ cup + 2 teaspoons) vegetable oil
  • Classic Cream Cheese Icing 
  • 170 g cream cheese, room temperature
  • 90 g unsalted butter, room temperature
  • ½ tsp salt
  • ½ tsp vanilla extract
  • 230 g (1 ½ cups) icing sugar
  • Method:
    1. Preheat the oven to 195 °C / 175 °C fan-forced. Place walnuts on the baking tray and toast for 10 mins, or until evenly coloured, then roughly chop and set aside. Get out four mixing bowls for the next steps, with two preferably larger than the other two.
    2. In one of the smaller mixing bowls, combine carrot and buttermilk and set aside. In another small mixing bowl, whisk dry ingredients together and set aside. Lightly grease and line a 20 cm cake tin with baking paper.
    3. In the larger mixing bowl, use an electric mixer on high speed to beat eggs, both sugars, and vanilla extract until slightly pale and thick. Reduce speed down to medium-low and slowly add in the oil.
    4. Into the larger mixing bowl, fold in the all the carrot buttermilk mixture and dry ingredients, alternating between the two to help combine easily. Mix until smooth, then fold the walnuts in.
    5. Pour the mixture into the prepared cake tin and place into the oven for 35-40 mins (rotating after 20 mins), or until a skewer comes out clean. Transfer the tin to a wire rack and let cool.
    6. While the cake is cooling, make the icing by combining all ingredients in a medium mixing bowl and beat using an electric mixer until smooth, light, and fluffy, about 2 mins. Ice the cake with a spatula and chill for 30 mins to help it set before serving. Enjoy!
